Project Overview

DANUBE provided a commercial drying room equipped with an air-source heat pump dryer for a dried shrimp processing project in Singapore. The system is designed for controlled batch drying of fresh shrimp, helping processors manage moisture removal and maintain more consistent product quality.

For seafood processors operating in a humid climate, outdoor drying can be difficult to control because of changing weather, airborne contaminants, and fluctuating humidity. An enclosed drying room provides a more manageable processing environment while allowing operators to adjust drying conditions according to shrimp size, preparation method, and finished-product requirements.

Customer Requirements

The project focused on three key processing considerations.

Color and Texture Control: Excessive or poorly controlled heating can affect shrimp appearance and texture. The customer needed a drying process that balanced moisture removal with the desired color and eating quality.

Uniform Moisture Removal: Shrimp loaded at different positions within a drying room may dry at different rates if airflow and loading are uneven. Consistent drying was therefore an important process requirement.

Hygienic, Corrosion-Resistant Construction: Seafood processing involves frequent contact with moisture and salt residues. Suitable food-contact materials and appropriate cleaning practices are important for maintaining equipment hygiene and durability.

Our Drying Solution

DANUBE supplied an air-source heat pump drying room for batch processing of fresh shrimp. The system combines PU insulated panels, controlled heating, dehumidification, and circulating hot air for efficient moisture removal in humid environments.

1. Controlled Drying Process

Drying temperature and duration are adjusted according to shrimp size, preparation method, initial moisture content, and target final moisture content. Controlled heating and dehumidification help maintain the desired color, texture, and drying uniformity.

2. Mesh Tray Loading and Airflow

Shrimp are arranged in single layers on mesh trays to improve hot-air contact and moisture evaporation. Proper tray loading and balanced airflow help reduce differences in drying results between trolley levels.

3. Stainless Steel Trolley System

Multi-tier trolley racks support efficient batch loading and unloading. SUS304 stainless steel food-contact components, as specified for the equipment, support hygienic processing and routine cleaning. Regular removal of salt residues helps maintain equipment condition.

Project Outcomes & Benefits

Consistent Drying Quality: Controlled heating and dehumidification support uniform moisture removal while helping maintain the natural color and appearance of dried shrimp.

More Predictable Batch Processing: The enclosed heat pump drying system provides controlled drying conditions, reducing reliance on outdoor weather and supporting more consistent production scheduling.

Frequently Asked Questions

Q1: What factors affect the drying quality of shrimp?

Shrimp size, shell-on or peeled preparation, initial moisture content, tray loading, airflow, and drying temperature all influence the final product. Drying conditions should be selected according to the required texture, appearance, and final moisture content.

Q2: Can an air-source heat pump dryer be used for shrimp in a humid climate?

Yes. An air-source heat pump dryer with a drying room can provide a controlled environment for batch drying, reducing dependence on outdoor weather. Actual performance depends on the equipment configuration, loading conditions, and processing requirements.

Q3: How can uneven drying be reduced when processing shrimp?

Distribute shrimp evenly across the trays and avoid excessive overlapping. During commissioning, compare moisture levels at different tray positions and adjust loading or airflow settings where necessary. The final drying cycle should be verified using representative product samples.
