Project Overview

DANUBE provided an air-source heat pump dryer with a drying room for fresh Sichuan peppercorn processing in Singapore. The system is designed to remove moisture from freshly harvested peppercorns under controlled conditions, preparing them for subsequent storage and processing.
Fresh Sichuan peppercorns require careful drying to help preserve their natural color and characteristic citrus-like aroma. Singapore’s humid climate and frequent rainfall can also make outdoor drying difficult to manage consistently. An enclosed drying room provides a more controllable environment for batch processing.
Customer Requirements
The project focused on three key processing requirements.
Color and Aroma Retention: Fresh Sichuan peppercorns are valued for their distinctive appearance and aromatic compounds. The drying process needs to avoid unnecessarily high temperatures that could compromise product quality.
Consistent Moisture Removal: Uneven drying can leave excessive moisture in parts of a batch, increasing storage risks. Appropriate loading, airflow, and drying conditions are essential.
Reliable Operation in Humid Weather: The customer needed an enclosed drying solution that reduced dependence on outdoor weather and supported more predictable processing.
Our Drying Solution

DANUBE configured an air-source heat pump dryer integrated with a drying room for batch drying fresh Sichuan peppercorns.
1. Enclosed Batch Drying
Fresh peppercorns are distributed across drying trays or racks at a suitable loading depth to allow air to circulate through the material. The enclosed chamber reduces exposure to rain, dust, and changing outdoor conditions during processing.
2. Controlled Temperature and Airflow
The air-source heat pump dryer supplies heated air to remove moisture under controlled conditions. Temperature, airflow, and drying time should be adjusted according to the initial moisture content, loading depth, and target finished-product quality.
For fresh Sichuan peppercorns, the aim is to achieve the required moisture reduction without unnecessarily compromising natural color and aroma. Final drying settings should be established through material testing and moisture measurements.
3. Commissioning and Drying Uniformity
During commissioning, the distribution of peppercorns on the trays and the airflow throughout the drying room should be checked. If samples from different tray positions show uneven moisture reduction, the loading arrangement and airflow settings can be adjusted before the drying cycle is finalized.
These checks help establish repeatable operating conditions for subsequent batches. The final settings should be confirmed only after the dried peppercorns meet the customer’s moisture and quality requirements.
Project Outcomes & Benefits
More Reliable Drying in a Humid Climate
The enclosed drying room reduces dependence on suitable outdoor weather, allowing fresh peppercorns to be processed in a more controlled environment.
Better Control of Finished-Product Quality
Adjustable drying conditions help balance moisture removal with the need to retain the peppercorns’ natural appearance and characteristic aroma. Product quality ultimately depends on raw-material condition and validated process settings.
A Repeatable Batch-Processing Workflow
The drying room supports defined loading, drying, inspection, and unloading stages. This makes it easier for operators to monitor moisture levels and refine processing conditions between batches.
